A Celebration Of Tea

Malabi Rose Chai

Ingredients (for 10 cups):
  • a1 liter of milk
  • 4 Wissotzky Rose Chai tea bags
  • 150 grams of sugar
  • 250 ml. of sweet cream
  • 75 grams of corn flour
For decoration:
  • Grenadine Cordial
  • Crushed roasted pistachio nuts
  • Coconut
  • Fresh strawberries
  • Warm the milk, sugar and rose chai in a pot without bringing to the boil.
  • Switch off the fire, cover the pot and leave it to simmer for about 10 minutes.
  • In the meantime mix the sweet cream and the corn flour until smooth.
  • Add a little of the milk to the mixture and then put all into the pot.
  • Remove the tea bags and cook the cream on low fire all the while stirring until the mixture becomes thicker (about 4-5 minutes).
  • Place the mixture in the individual cups and cover with plastic wraps
    and refrigerate well for at least 4 hours or preferably overnight.
  • Pour the cordial and scatter the decorative items on the top of each cup of Malabi
    and serve cold.
